This Week's Dinner Line Up

As I've said so many times before, we can plan all we want to, but sometimes those plans go right out the door. Last week I fell ill with an ear infection and felt absolutely miserable. I planned all my meals out but when it came time to do the cookin', I just didn't feel up to it. So my Wednesday's garlic pork shoulder didn't happen. I woke up and decided to throw my picnic roast into the good 'ol crock pot with a can of black bean and green enchilada sauce. Sometimes we gotta leave it to the pros (the crock pot that is!) when we aren't up to cooking. Friday, which is our meatless day, I had our homemade cheese pizza planned when Brandon decided to come home for lunch and eat cheese pizza. To avoid a repeat meal for my hubby, I did bean and cheese nachos. I decided to get 'fancy' (and I use this term fancy loosely!) with the nachos. I was inspired by the crispy black bean tacos with feta and slaw and decided to hearty up Penelope's and my nachos. I added a glob of avocado, black olives, and lastly, a handful of slaw. Penelope and I thoroughly enjoyed these decked out nachos!

Here is this week's dinner lineup and I'm trying out quite a few new recipes. I'm looking forward to see how they turn out!
Monday: Garlic Lime Marinated Pork Chops, with cauliflower, rice, and cantaloupe
Tuesday: Martha Stewart's Tortilla Pie with Chicken and kiwi
Wednesday: Cafe Rio Chicken tacos, beans, and sliced up strawberries
Thursday: Buttermilk Fried Chicken (Brandon actually requested something for dinner, this NEVER happens so ask and he shall receive!), mashed potatoes, and tropical fruit salad (I'm going to throw some strawberry yogurt, bananas, mango, and coconut together and viola, tropical fruit salad is born!)
Friday: Homemade Cheese Pizza
Saturday: Nuggets, mango, and Garlicky Baked Fries (I'm going to reduce the amount I make since Penelope and I will be the only ones eating these)
Sunday: Slow Cooker Creamy Chicken and Wild Rice Soup (This is REALLY good and Brandon actually ate a couple bowls of it and said it tasted good! I COULDN'T believe my eyes! He was eating a soup that didn't come from a Cambells can and LIKED IT!!!! I think this may be our new Sunday soup entree)
