Last week was a great week for newly tested recipes. The baked sweet and sour chicken was a successful dinner entree and will be placed on the 'make again' dinner list. I didn't make the fried rice that the blog suggests to serve it with, but instead, served it with white rice. Overall, I give this dish two thumbs up!
I also made eggplant sticks that I ended up eating all on my own. Yes, I am an eggplantaholic. I gave two sticks to Penelope that she enjoyed dipping in her ranch while I furiously ate the rest, dipping mine in marinara sauce. If you are an egg plant lover, or even if you aren't, I HIGHLY recommend trying this recipe and beware, you may end up eating an entire eggplant by yourself!
Baked Eggplant Sticks
I'm ecstatic to have my family coming into town this weekend and I will definitely be making these delicious sticks for them. I've already placed on my grocery list, three eggplants, so that there will be enough for them to eat as well.

However, the prep time is a tad bit lengthy (but definitely worth the effort!) so I went to my bff Pinterest in search of a different recipe. I found this one hour cinnamon rolls recipe and I do believe I'll be utilizing this recipe more often. They were so delish and a lot quicker to make than some others I have tried. Before I could get a picture of the sweet yummy goodness, Penelope had brought over a chair, climbed right up to the counter, and stole a hot one. Hence, the reason the pan is missing one!

This is them prior to being iced. I did make the icing that went with them but in my opinion, not being a sweet addict, I preferred mine without the icing. Either way though, these were heaven!

Monday: I won a free Dominos artisan pizza, holla back! I love the word FREE! And hubby was also ecstatic since he is a former employee from back in the good 'ol college days. Anytime he can have Dominos, he is in pure bliss! We ate the Chicken and Bacon Carbonara, sooo good!
Tuesday: Chick-Fuh-Lay Nuggets, sliced cantaloupe, and baked Parmesan asparagus fries
Wednesday: Ground turkey enchiladas, slow cooked pinto beans, and rice
Thursday: Grilled pork chops, broccoli, mashed potatoes, and sliced melon
Friday: Homemade Pepperoni Pizza, fresh fruit, and sliced cucumbers in italian dressing
Saturday: MY FAMILY IS IN TOWN! Brown Sugar and Balsamic Glazed Pork Loin (last week's pork loin was apparently not so good, I opened it and it had an AWFUL smell !), baked eggplant sticks, baked potatoes and sweet potatoes, salad with Copycat Olive Garden Dressing and since the family will be here I'm doing a yummy dessert, Chocolate Banana Pudding
Sunday: Vegetable Soup, fresh fruit, salad with Copycat Olive Garden Dressing
